Baked Mozzarella Sticks

YUMMM!! Is your mouth watering already?  It should be!!!!  I have a feeling you will be seeing many more posts from me that come from Skinnytaste.com.  This woman is BRILLIANT and the food is AMAZING!!!   I found these mozzarella sticks on her site.  and fell in love.  Seriously!   Baked instead of fried? I was skeptical, but WOW...my kids and hubby inhaled them!!! and wanted more, but I hadn't thought to make a second batch!!  LOL  Now, I know for next time!!!

Ingredients

12 sticks Sargento part-skim, reduced sodium mozzarella string cheese (I couldn't find reduced sodium, only the part skim so i used those.
1 large egg, beaten
2 tbsp flour
5 tbsp Italian seasoned breadcrumbs
5 tbsp panko crumbs
2 tsp parmesan cheese
1 tbsp dried parsley
olive oil cooking spray (I don't have Olive Oil Spray so I Used my Pam Spray)


Removed cheeses from their packaging and slice in half.  Freeze the cheese!!  a MUST!!!  Mine were in the freezer for about 2 days due to being sick and kids sick and all but obviously it won't take that long to freeze them.


Once cheese is frozen, put beaten egg in a small bowl, flour on small plate and combine breadcrumbs, panko crumbs, cheese, and parsley into another bowl.


Roll cheese first into flour, shaking off excess.


Then into egg.


And finally, into the breadcrumb mixture.


Place on a waxed sheet and FREEZE!!!  This is a MUST or your "sticks" will be little puddles  in the oven.


Once frozen, place on a baking sheet covering in foil and sprayed with olive oil. spray tops of sticks as well.


Place in preheated 400° F oven for 4-5 min. or until crisp.  Turn and bake an additional 4-5 minutes.  just make sure you watch them closely to make sure they don't burst and become melted puddles.  While still good, it's very hard to dip puddles!!  LOL  

These are obviously best served right from the oven.  Makes 24 pieces.
