Baked Mac & Cheese Balls



Hmmm...Yummmm....oh sorry, still enjoying how YUMMY these were!!!  and to think its so much better for you than what most people do with FRYING them.  Now, I did borrow the breading ingredients and technique from Skinnytaste.com's Baked Mozzarella Sticks which I have already made HERE.  I'm SO glad I did!!  You can really use ANY macaroni and cheese Recipe you want but since I had some Mom's Sneaky Mac & Cheese left over, I decided to use that.

Ingredients:
Mac & cheese, COLD!

3 large egg, beaten
4 tbsp flour
10 tbsp Italian seasoned breadcrumbs
10 tbsp panko crumbs
4 tsp parmesan cheese
2 tbsp dried parsley
Cooking spray 



First thing you need to do, is line a baking sheet with wax paper.  Take small spoonfuls of the cold mac and cheese and form balls. Place on wax paper lined baking sheet.  Once all are done, FREEZE!  you MUST freeze these in order to move on to the next step.


Once balls are frozen, place flour on a shallow plate. Beaten eggs in a small bowl.  And combine the rest of the ingredients very well into a larger bowl or once mixed, place on a plate.  


First you roll your ball in the flour, shaking off excess.


Then into the egg.


And finally, into the bread crumb mixture. Place on the waxed paper. Once all are done, FREEZE again, until fully frozen and you are ready to bake them.


Place frozen balls on a greased baking sheet.  Spray tops of balls with Cooking spray (I use Pam) and then place in a preheated oven at 425 degrees F.  I placed mine on the lowest shelf. Bake for 5-6 minutes and then flip them over. Bake an additional 5-7 minutes.

These are best when served immediately.  I am experimenting how they do reheated after placing some precooked ones back in the freezer.  I will update this when I get that answer for you.  ENJOY!!

    1. I have to say, the picture does NOT do them justice at all!!!! I had to remove some and HIDE them from my family because they were devouring them! LoL
