Homemade Griddle Sandwiches

Have you ever gotten a craving for a fast food but don't want to drive to get it?  or would rather not put in your body whatever crazy stuff they have in them?  I got this craving for those dreaded McDonald's Mcgriddle Egg Sandwiches.  I decided to make them myself.  You could use a prepared mix for the pancakes, or you can use the recipe I've already posted for Pancakes from scratch.   I am not giving measurements as it is to your discretion how much you want to make.

Ingredients:

Prepared Pancake Mix
Pancake Syrup
Scrambled Eggs
Slices Of American Cheese

Directions:

Preheat oven to 375°F.

Spray a muffin top pan with cooking spray.  Unless you are one of those lucky people who don't turn pancakes into unrecognizable saucers!!   Pour pancake batter until 2/3 full.

Sprinkle the pancake syrup on top.  (I think next time I will mix it right into the batter for a more even flavor)

Bake for about 15 minutes (or until you see the sides are pulling away from the pan) and then gently flip them over.  Bake for another 5-10 minutes or until golden.

Layer with eggs and slice of cheese and then the top to form the sandwich.

Enjoy!!!

  3. Those are much better for you than the fast food version. I'll have to go buy a muffin top pan!
