Apple Cider Donut Bites

So, I saw this amazing picture in my Facebook feed from my cousin.  She had made these Baked Apple Cider Doughnut Holes and they looked great!!!  Of course, you know I HAD to ask for the recipe and informed her that if I made it, I was blogging it!  And here we are!!!  Mine look NOTHING like hers,  Especially since its supposed to be baked in a mini muffin pan that my darling husband had given to his cousin in Canada (don't ask how it even got there because that's a whole different story in itself!!) after promising to replace it with a newer and better one.  LOL  That never happened.  So, I made due with what I have!  and I'm HAPPY I did!!!  They are sooo yummy!!  I made them at 8pm last night and by this morning, there are only a few pieces left!!!!  Of course, these have so many variations to them!!  My hubby likes them without the cinnamon sugar coating (*GASP*  the horror!! I know!!  LOL). I like them best with just the tops covered in the coating and my kids, well of course, they like the WHOLE thing covered in coating the best!!  LOL  This recipe has alot of ingredients but is VERY easy to make!!



Ingredients:

2 cups flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
2 teaspoons cinnamon
1 large egg
2/3 cup brown sugar
1/2 cup apple butter
1 tsp vanilla extract
1/3 cup honey
1/3 cup apple cider
1/3 cup plain yogurt (I used plain nonfat Greek yogurt)
2 Tbsp canola oil
canola cooking spray
2 Tbsp unsalted butter
1/4 cup sugar
1 Tbsp cinnamon

Directions:

Preheat oven to 400°F.  Spray muffin pan with cooking spray.


In a medium bowl mix together flour, baking powder, baking soda, salt and cinnamon.



In a large bowl, whisk together the egg, brown sugar, apple butter, vanilla extract, honey, apple cider, yogurt, and oil.  I know it doesn't look appetizing at all right now, but please trust me!!!  LOL



Pour in the dry ingredients and mix until just incorporated.  Lumps are OK!!!


Here's where it gets tricky since we all know I have measuring difficulties!! LOL  You are supposed to use a mini muffin pan but as I explained earlier, I do not have one!  so, I used the cupcake size one. I filled to about half, but original said 3/4 full (I'm guessing for a mini muffin, that works).


Bake for 10-12 minutes.  Let cool until they can be handled with your hands.


I then cut mine in 4ths.  


Mix the sugar and cinnamon together. 


Melt the butter.


Now, you are supposed to brush the holes with a pastry brush.  However, once i decided to just do tops, I eventually just started dunking the top in and any excess, I dabbed unto the top of another piece.  


And then cover in sweet cinnamon goodness!!!

And the whole muffin with just the top dunked!!!  I hope you enjoy this as much as my family does!!  Especially since I apparently have to make another batch today!!!  LOL  ENJOY!

    Seriously, these look so good, just like the tastycake donut holes almost, but in bigger bits and not so round. I bet they're so good with coffee or milk.

    1. Haha. Way to make people jealous!!! ;) I wanted them round, but it it didn't work out for me. Maybe when hubby gets to replacing my mini muffin pan! LoL
