Ingredients:
15 oz | can pumpkin puree |
1/2 c | sugar |
1/4 c | brown sugar |
2 | large eggs |
1 tsp | vanilla extract |
3/4 c | evaporated milk |
2/3 c | all purpose flour |
2 tsp | pumpkin pie spice |
1/4 tsp | salt |
1/4 tsp | baking powder |
1/4 tsp | baking soda |
Directions:
Preheat oven 350°F. You can either use foil liners, or silicone liners on the muffin pan. I didn't have either so I sprayed the pan with PAM. DO NOT use paper liners!!
Mix the pumpkin, sugar, brown sugar, eggs, vanilla extract and milk.
Add the flour, pumpkin spice, salt, baking powder and baking soda to the mixture.
Mix Well!!!
Fill each muffin cup about 1/3 full. As you can see, I can't judge well!! LOL
Bake for 20 minutes. Let cool for 20 minutes before removing from the pan.
Place in the fridge for 30 minutes. You can then top with whip cream, or cool whip (which is what I used) and serve!!!!
ENJOY!!!
