Apple Cider Pancakes

I saw these on my news feed on Facebook this morning and immediately decided I was making them!!  The original recipe is from Buns In My Oven.  I changed it slightly and just used regular syrup. I also doubled it so I can freeze them for school mornings.  Below is the original measurements.   I may change it even more next time, but for now, I'm happy and full!! :D





Ingredients:

2 cups flour
2 teaspoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 eggs
1/4 cup butter, melted
1/2 cup buttermilk
1/2 cup greek yogurt
1 cup apple cider


Directions:


Mix first 6 ingredients in a medium bowl.


Mix remaining ingredients in a small bowl.


Pour wet into dry and mix until all is combined.  Small lumps are ok!!!


Cook in sprayed frying pan as you would any pancake letting it sit until bumps are forming and then flipping.  We used regular syrup because my kids were too impatient to wait for anything else.  I think they came out wonderful!!  Enjoy!!!
