Today I am going to share something I found on another website while i was doing my month long stint of low carb eating. Even tho I'm no longer doing the diet, I LOVED this recipe so I thought I would share it with you all!! It came from Linda's Low Carb Menu. The pictures are my own.
Ingredients
4 large green peppers, halved lengthwise and seeded
1 pound ground beef
1 clove garlic, minced
Salt and pepper, to taste
1/4 teaspoon garlic powder, divided
1/2 pound mushrooms, sliced
1 cup spaghetti sauce
15 ounces whole milk ricotta cheese
2 tablespoons parmesan cheese
1 egg
6 ounces mozzarella cheese, shredded
1/4 cup parmesan cheese
I only used 3 peppers as that was all I had. My family doesn't do mushrooms...never have, probably never will. So, I left out the Mushrooms. BUT, I seasoned the meat sauce a bit more with Adobo and Goya powdered Chicken bouillon.
Instructions
First. Place the peppers in a large baking pan at least 9 x 13 inches; sprinkle the inside of the peppers with salt.
Meanwhile brown the ground beef, garlic, mushrooms, salt, pepper and half the garlic powder; drain the fat. Stir in the spaghetti sauce and adjust the seasonings as needed. Combine the ricotta cheese, egg and 2 tablespoons parmesan cheese in a small bowl; season with salt, pepper and the remaining garlic powder.
Divide the ricotta mixture between the pepper halves.
Top the ricotta mixture with the meat sauce.
Followed by a mound of mozzerella cheese.
Sprinkle with the 1/4 cup parmesan
Bake at 350ยบ for 45 minutes or until the cheese is melted and browned.
One Pepper half is one serving. And these CAN be frozen!!! here are some of the nutritional values.
Per Serving: 327 Calories; 21g Fat; 24g Protein; 9g Carbohydrate; 2g Dietary Fiber; 7g Net Carbs
One tip: DO NOT FORGET to season the inside of the peppers before filling them. I only did a SLIGHT amount of salt and they could have used a bit more.
Other than that, these were SOOO DELISH!!!

As you know, I made these shortly after you posted this on the forum. They really are delicious! For those not on the Low-Carb diet, adding some garlic bread or Italian bread as a side would be yummy too! :)

Hello!! I finally made it over here! This looks delicious!!! So good! I do the low carb thing- have for almost 6 years. Now I have gone a bit further with it because I have the worst digestive issues on the planet. Anyway, this recipe looks so good and easy. Definitely writing it down!
